These Blueberry Cottage Cheese Muffins are soft, fluffy, lightly sweet, and such an easy breakfast or snack for the whole family. They’re made with ripe banana, cottage cheese, juicy blueberries, a mix of all-purpose and almond flour, and a little fresh lemon zest.

And coming from someone who is definitely not much of a baker, these are surprisingly easy to make! 😅 Most of the wet ingredients just get tossed into a blender, then everything gets mixed together and baked.

They’re toddler-friendly, but definitely not just for toddlers. I love grabbing one with my morning coffee too!

Ingredients

  • 1 ripe banana

  • 1 cup cottage cheese

  • 2 eggs

  • 2 tbsp melted butter or oil

  • 2–3 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • Zest of 1 small lemon

  • 1 cup all-purpose flour

  • ½ cup almond flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup fresh or frozen blueberries

Directions

  • Preheat the oven to 375°F (190°C)and prepare a 12-cup muffin pan with liners or oil spray.
  • Add the banana, cottage cheese, eggs, melted butter or oil, maple syrup or honey, and vanilla to a blender. Blend until smooth.
  • In a large bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  • Pour the blended wet ingredients into the dry ingredients and gently stir until just combined. Don’t overmix.
  • Gently fold in the blueberries and lemon zest.
  • Divide the batter evenly between the muffin cups.
  • Bake for 20–24 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 5–10 minutes before transferring to a cooling rack.
