These soft pumpkin oat bars bring all the cozy fall flavors into an easy breakfast or snack. Made with pumpkin purée, quick oats, nut butter, maple syrup, and hemp hearts, they come together in one bowl with no eggs or flour needed.

Cinnamon, pumpkin spice, and little pockets of chocolate make these bars feel like a fall treat. They’re toddler-friendly, easy to portion, and just as delicious for grown ups. I love adding a little Greek yogurt on top, especially when serving them for breakfast!

Ingredients

  • 1 cup pumpkin purée

  • ½ cup smooth peanut butter or almond butter

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • 1½ cups quick oats

  • 2 tbsp hemp hearts

  • 1 tsp cinnamon

  • ½ tsp pumpkin pie spice, optional

  • ¼ cup mini chocolate chips

Directions

  • Preheat the oven to 350°F (175°C). Line an 8 × 8-inch baking pan with parchment paper, leaving a little overhang on two sides so you can lift the cooled bars out.
  • Add the pumpkin purée, nut butter, maple syrup, and vanilla to a large bowl. Stir until smooth and evenly combined, with no streaks of nut butter remaining.
  • Stir in the quick oats, hemp hearts, cinnamon, and optional pumpkin pie spice. Fold in the mini chocolate chips.
    Let the mixture rest for 5 minutes so the oats can absorb some moisture. It should be thick and spreadable, not pourable like pancake batter.
  • Transfer the mixture to the prepared pan. Spread it into the corners and smooth the top with a spatula, keeping the thickness even so the bars bake evenly.
  • Bake for 25–30 minutes, until the edges are set and the center no longer looks wet. The middle can still feel slightly soft; these bars will not become crisp or springy like cake.
    If the center still looks wet after 30 minutes, bake a little longer, checking every few minutes.
  • Let the bars cool completely in the pan. Lift them out using the parchment and cut into 8 bars, or smaller pieces for toddlers.
    Avoid slicing while warm, as the bars will be more delicate. For cleaner slices, refrigerate after cooling before cutting.

Notes

  • Tips for the best texture
    Measure the pumpkin and oats carefully. Extra pumpkin can make the bars too wet, while extra oats can make them dry.
    Use the recommended pan size. A smaller pan makes thicker bars that need more baking time.
    Give the mixture its 5-minute rest before baking.
    Do not expect a crunchy or cake-like result. These bars are soft and moist.
    Let them cool fully before deciding whether they have set. They become firmer as they cool and chill.
    Storage
    Once completely cool, store the bars in an airtight container in the refrigerator for up to 4 days. Place parchment between layers if stacking.
    Enjoy chilled, or briefly warm an individual portion for a softer texture.
    Can I use rolled oats?
    Quick oats are the best fit for the soft texture of this recipe. If you only have old-fashioned rolled oats, pulse them briefly in a food processor to break them into smaller pieces without turning them into flour. Whole rolled oats will give a chewier, more noticeable oat texture.
