These savory Pumpkin White Bean Waffles are an easy 10-minute lunch made with pumpkin purée, white beans, cheddar, and a few simple pantry ingredients. They’re soft on the inside, slightly crisp around the edges, and such an easy toddler-friendly lunch or dinner.

I’m always looking for quick lunches that aren’t another sandwich, and these were such an easy way to switch things up. The pumpkin keeps the waffles soft, while the white beans add some protein and fiber without changing the flavor too much. And of course, a little cheddar makes everything better!

They’re also perfect when you have some leftover pumpkin purée sitting in the fridge during fall.

Ingredients

  • ½ cup pumpkin purée

  • ½ cup canned white beans, drained and rinsed

  • 1 large egg

  • ½ cup shredded cheddar cheese

  • ¼ cup all-purpose flour

  • ½ teaspoon baking powder

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • Pinch of salt, optional

Directions

  • Preheat and lightly grease your waffle maker.
  • Add the white beans to a bowl and mash very well with a fork.
  • Add the pumpkin purée and egg and mix until combined.
  • Stir in the shredded cheddar, flour, baking powder, garlic powder, onion powder, and optional salt.
  • Mix until you have a thick, scoopable batter. If it looks too wet, add another tablespoon of flour.
  • Scoop the batter into the preheated waffle maker.
  • Cook until the waffles are golden and slightly crisp around the edges.
  • Let cool slightly before serving.

Notes

  • Cooking time will depend on your waffle maker, so the 10-minute total time may vary slightly.
Make sure you’re using 100% pumpkin purée, not pumpkin pie filling.
For toddlers, you can skip the added salt since the cheddar already adds flavor and sodium.
The waffles will be naturally soft inside because of the pumpkin and white beans. Letting them cook until golden will help the outside crisp up.
