Ingredients

  • 1 cup cooked chickpeas, drained, rinsed and patted dry

  • 1 cup raw cashews

  • 8–10 Medjool dates, pitted

  • ¼ cup unsweetened cocoa powder

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Coconut flakes, hemp seeds or sprinkles, optional, for rolling

Directions

  • Add the cashews to a food processor and blend until finely ground.
  • Add the chickpeas, dates, cocoa powder, vanilla and salt. Blend until everything comes together into a smooth, sticky mixture. You may need to stop and scrape down the sides a couple of times.
  • If the mixture feels very soft or sticky, chill it for 15–20 minutes before rolling.
  • Lightly wet your hands and roll the mixture into bite-sized balls. Roll in coconut flakes, hemp seeds or sprinkles, if you’d like.
  • Refrigerate for about 30 minutes to firm up, then enjoy!

Notes

  • If the mixture is too soft:
Add 2–3 tablespoons of rolled oats or oat flour and blend again. You can also refrigerate the mixture for 15–20 minutes before rolling.
    Dates:
Start with 8 Medjool dates and taste the mixture. Add another 1–2 if you’d like the brownie bites sweeter. If your dates are firm or dry, soak them in hot water for about 10 minutes, then drain them really well before using.
A good food processor makes all the difference here! I use this one to get the cashews finely ground and the brownie mixture nice and smooth.
    Storage:
Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 3 months.
