It’s made with banana, strawberries, almond flour, egg and hemp hearts, making it such a fun little breakfast for toddlers and kids. And because there’s no oven involved, it’s perfect for busy mornings when you need something quick!

A soft and fluffy strawberry banana breakfast cake made right in the microwave! An easy single-serve breakfast made with almond flour, egg and hemp hearts.

Ingredients

  • ½ small ripe banana

  • 2 medium strawberries, finely chopped

  • 1 egg

  • ¼ cup fine almond flour

  • 1 tbsp hemp hearts

  • 1 tbsp milk of choice

  • ¼ tsp baking powder

  • ¼ tsp vanilla extract

  • 1–2 tsp maple syrup or honey, optional

Directions

  • In a small microwave-safe ramekin, about 8–10 oz, mash the banana really well with a fork.
  • Add the egg, milk, vanilla and maple syrup or honey, if using. Mix until well combined.
  • Add the almond flour, hemp hearts and baking powder. Stir until you have a smooth batter.
  • Fold in the finely chopped strawberries.
  • Microwave for 75–90 seconds, checking around the 70-second mark. It’s ready when the top looks set and a toothpick inserted into the center comes out mostly clean.
  • Let it cool for at least 5 minutes before serving. The cake will continue to set as it cools and will be easier for little hands to eat.

Notes

  • Banana: Use a nice ripe banana for the best natural sweetness.
    Strawberries: Chop them fairly small so they’re distributed throughout the cake and cook evenly.
    Microwave time: Every microwave is a little different, so start checking early. Avoid overcooking because almond flour cakes can become dry.
    Sweetness: The ripe banana and strawberries add natural sweetness. For a sweeter cake, add 1–2 teaspoons of maple syrup or honey. Honey should only be used for children over 12 months old.
    Easy Swaps
    Instead of strawberries, try blueberries, raspberries, finely chopped peaches or diced ripe pear.
    You can also leave out the fruit for a simple banana breakfast cake.
    Storage
    This one is definitely best enjoyed fresh. If you have leftovers, cover and refrigerate for up to 24 hours. Reheat for about 10–15 seconds in the microwave if desired.
